Gratitude Tuesday

Today I am thankful for this chocolate cake recipe.  For years now, I've been eating those Betty Crocker Warm Delights cakes.  Full of preservatives and who knows what else, yes.  But chocolate cake in three minutes??  Can't be beat.

Except it can.  This recipe is rocking.  I used a little too much cocoa this time, but next time I'll know.  I put it in my 16 oz Corningware dish, and it was the perfect size.  In fact, next time I'll probably cut it in half - I could only eat about three quarters of it.

Topped it with ice cream.  Just the best dessert ever.  And I made it with whole wheat flour, so it's healthy.
